Gourmet Biltong (Air-Dried Beef)

What is the difference biltong and jerky?  It lies in how each is made: With biltong, the meat remains in a vinegar and spice-based marinade until cured, then air-dried and finally cut into thick pieces or thin strips and served as is or in this case, packaged to be enjoyed later. The results?  A tender true meat flavor without all the added sugar and salt.
